Carob Nut Butter – Healthy and Nutrient packed

Recently, I was at the store to buy our monthly stock of nut butters and jams. As I was going over the ingredients, I kicked myself (mentally) for buying something with so much salt, stabilizers and hydrogenated oils. I put it all back (the nut butter, not the jam – that is a skill I have yet to acquire) and decided to make my own!

A little reading on the how of the process and I decided to make Carob Apricot Nut butter or Carob ‘Nutella’. This nutty, chocolate-y nut butter turned out so much better than any store bought ones I have ever had. I wondered why I didn’t try this earlier. Moreover, it is sugar free and caffeine free, the two things that make me happier when my son devours it.

Almost everyone loves spreads, especially kids. Our family is no different, be it a jam or nut butter or a chutney. As a working mommy, I find it easier to just slap a load of my son’s favourite spread on a chapati or a whole wheat bread and call it a snack. It is filling and nutritious. I gifted a friend with IBS a jar of my homemade carob apricot nut butter, because it is gluten free. He was very happy because he could finally savour something close to nutella!

Carob apricot nut butter goes well with crackers, as a spread on breads or as a dip with apples. You can serve it to your guests and bask in glory when they go wow.

Word to the wise. You may have to make a big batch as it is difficult to stop eating once you start!

Carob Apricot ‘Chocolate’ Bars

I still cannot get over how yum these ‘chocolate’ bars turned out. Yum does not even begin to describe them. They were ‘d-i-v-i-n-e’. After all they are packed with the goodness of Carob, Sweet Apricot Kernels and Coconut Oil. You will be pleased to learn that these bars are dairy free, sugar free and gluten free. So lets say bye-bye to any sugar rush!

The star ingredient, carob powder, is rich in iron, calcium and other minerals. And dietary fibre. And natural sugar! It also has many traditional medicinal uses, like boosting metabolism in kids and improving heart function in adults.

I am a bit wary of giving my son ready made, packaged chocolates as they are full of sugar and chemicals. But he being a kid loves it and I don’t have the heart to say no to him every time he asks for one. That’s when I started thinking hard and fast and came up with these carob apricot ‘chocolate’ bars. They look just like store bought chocolate but are full of all the good stuff and contain NO chemicals! Win-win for all!

These chocolate bars also make for a good, healthy and different gift, during the festival season. The nutty, roasty, earthy flavour of carob was so tempting we could hardly keep our hands off the chocolates long enough to take pictures. Go ahead. Chocolate Granola

This is a pan cooked version to create a crunchy and toasty chocolate granola recipe. You can load this healthy cereal with your favourite nuts and seeds and add some cocoa powder for a chocolate edge. My favourites are almonds, apricot kernels, sunflower seeds and chia seeds. These nuts are full of good fats and omega 3 as well as healthy nutrients keeping your digestive system and immunity levels in tact. I include chia seeds into as many meals as possible, as these tiny little seeds are a wonderful super food known for their anti-oxidant properties and contain minerals such as Iron and zinc as well as fibre and protein.
Oats are a heart healthy wholegrain that help to lower cholestrol levels and are packed with fiber for our digestive health. Cinnamon helps create that toasty flavour and fills up your kitchen with a lovely aroma that gets your belly rumbling! I refer to cinnamon as a super spice and love to add a dash of it into my recipes due to its natural healing abilities as well as its versatility to be used in both savoury and sweet dishes.
Coconut oil is one of my preferred choice of oils due to its antiviral and antibacterial properties, boosting our immune system and acting as a natural anti-oxidant.
The use of blackcurrants and cranberries give a lovely soft texture in contrast with the crunchy nut taste as well as adding extra anti-oxidants in their fruity flavours.

This is a pre-prepared breakfast recipe that saves you time and effort in the mornings. It is made up of nuts, seeds, oats, fruit, orange juice and non dairy milk giving you a well rounded and healthy gluten-free breakfast. Oats are great soakage for the orange juice and coconut milk and provides a great source of fibre for digestive health and boosting energy. Sunflower seeds, apricot kernels and chia seeds deliver an excellent combination of anti-oxidants, vitamins and minerals neceesary for your immunity and digestive systems, improving your overall well-being. The dried blackcurrants and cranberries offer another powerhouse of nutrition and anti-oxidant elements, setting you up for your day. Of course, you can never go wrong by adding a dash of cinnamon for its delicious taste and building up your immunity.

Homemade Granola

This is a simply delicious breakfast recipe and one of my favourites!

It will set you up nicely for the day or alternatively can be consumed as a dessert depending on your taste. It is made with oats and various nuts and seeds which allows you to use the nuts of your choice. I used almonds, apricot kernels, sunflower seeds, and chia seeds.

Oats are high in fibre helping your digestive health, and help you to release energy slowly throughout the day curbing those cravings and aiding in weight loss. Apricot kernels contains vitamin B17 and vitamin E making it high in anti-oxidants and increasing immunity levels. Chia seeds and sunflower seeds are packed with nutrients promoting immunity and digestive health. Almonds are rich in fiber and protein and are cholestrol free. The cinnamon and apple juice compliment each other in taste and help to warm the belly on those colder mornings. The dried cranberries and black currants not only add a great flavour to the crunchy nutty texture but are also full of nutrients and anti-oxidants. The great thing about granola is that you can eat it alone as a snack, or mix it with natural yogurt and fruit or pour it on top of your oatmeal as part of your breakfast.
