Store in a cool, dry place
Our Cacao powder is non-alkalized and hence colour may be lighter than commercial cocoa powder. Cacao Powder may not mix homogenously and dissolve completely in liquid.
Our cacao powder is made from hand-picked pods grown and harvested by experienced farmers in Kerala, India.
2. How is your cacao powder made?
The beans are fermented with the pulp for 4–5 days, sun-dried, roasted at 120°C. The roasted beans are then cracked, winnowed, and the nibs are stone-ground for 25–30 hours into a smooth cacao paste. This paste is cold-pressed to remove the cacao butter, and the remaining solid mass is finely milled into powder (<150 microns). No alkalisation or chemical processing is done at any step.
3. Why are the beans roasted?
Roasting enhances the natural chocolate aroma and flavour and also ensures hygienic safety.
4. What temperature are your beans roasted at?
We roast our graded beans at around 120°C, with timing adjusted according to bean size.
5. What is the pH of your cacao powder?
Our cacao powder has a natural pH between 5-6, compared to alkalised (Dutch-processed) cocoa, which usually has a pH of around 8.
6. Why is non-alkalised cacao better?
Non-alkalised cacao retains its natural antioxidants, minerals, and authentic chocolate flavour, unlike alkalised cocoa, which is processed with chemicals to neutralise acidity and alter taste.
7. What is the difference between cacao and cocoa? Why is yours called cacao?
Cacao powder is the pure, minimally processed form of chocolate. Cocoa powder, on the other hand, is usually alkalised and more heavily roasted.
Since ours is non-alkalised and minimally roasted, we label it as Cacao Powder, and it is the most natural form of chocolate you can get.
8. What are the benefits of cacao powder?
Cacao powder is naturally rich in antioxidants, magnesium, iron, and potassium. It supports health, boosts mood and energy, and adds deep chocolate flavour to recipes.
9. How can I use cacao powder?

10. Why does cacao powder sometimes have a sour or acidic smell or taste?
We source the best and work in small batches. Sometimes, climatic conditions can cause natural variations in the level of fermentation during cacao processing. A slight sourness is expected in pure, non-alkalised cacao powder, which typically has a pH between 4.8 and 5.5.
If it tastes overly acidic, here are a few simple remedies you can try:
Neutralise the acidity – Add a small pinch of baking soda to your cacao-water mixture to balance the flavour.
Evaporate the acid – Lightly bake the cacao powder at 120°C for 4–5 minutes to reduce the acidic notes.
