Ingredients:
-2tbsp Olive Oil
-1 cup Cabbage
-3/4 cup Carrot
-1/2 cup Green Peas
-1/2 cup Green Onion
-1 cup Mushrooms
-1 cup Goan Red Rice (Slightly overcooked )
-Salt to taste
-Pepper to taste
-2 1/2 cups water
Method
1) Heat the oil over medium heat. Once hot, add the diced carrot, mushrooms, green peas, cabbage, and chopped green onions. Cook for about 8 minutes, or until carrots are cooked. Add the soy sauce(optional), pepper, and salt, and cook for one more minute. Remove from heat and set aside.
2)In another vessel combine the overcooked red rice with the water. Once it starts simmering add the cooked vegetable mixture and cook for another 5 mins.
3)Serve warm with a sprinkle of ground black pepper and toasted sesame seeds.
