Refreshing Sola kadhi with coconut milk

This refreshing drink, inspired by the vibrant flavours of Goa, brings together the goodness of coconut and the tangy twist of kokum. Kokum, known for its tangy flavour with a hint of acidity akin to citrus fruits, pairs wonderfully with coconut milk. The coconut milk not only adds a rich creaminess but also brings a subtle sweetness that complements the tanginess of the kokum. With its abundance of healthy fats, coconut milk contributes to a velvety texture, infusing a tropical allure into this Sola Kadhi, creating a truly indulgent delight.


 Ingredients

Kokum Rind 12-15

Himalayan Salt to taste

1 cup grated coconut

2 tbsp of chopped coriander leaves

2 inch ginger


 Method

  1. Soak Kokum Rind in water for 15 minutes.
  2. Blend coconut, coriander, and ginger in a blender.
  3. Add water and strain the mixture.
  4. Squeeze out the juice from soaked Kokum Rind.
  5. Combine the kokum juice with the previously prepared coconut milk and stir.
  6. Add Himalayan Salt as per taste and Garnish with coriander.
