Healthy Oat Bran and Veggie Breakfast Muffins

In this recipe, we combine hearty oat flour and oat bran with grated zucchini, carrots, and apple for a boost of nutrients and natural sweetness. We also add in a touch of coconut sugar for extra flavor, along with warming spices like cardamom powder for a delightful aroma.

  • 1 cup Oat flour
  • 1 cup Oat bran
  • 1/3 cup coconut sugar
  • 1/4 tsp salt
  • 1 1/2 tsp baking soda
  • 1/4 tsp cardamom powder
  • 1 1/2 tsp baking powder
  • 1 tbsp raisins
  • 1 cup grated zucchini
  • 1 cup grated carrots
  • 1 cup grated apple
  • Water
  • 2 tbsp coconut oil


  1. In a large mixing bowl, combine oat flour, oat bran, coconut sugar, salt, baking soda, cardamom powder, and baking powder. Mix well.
  2. Add in raisins, grated zucchini, grated carrots, and grated apple. Stir until everything is evenly distributed.
  3. Gradually add water and coconut oil to the mixture, stirring until you achieve a thick batter-like consistency.
  4. Preheat your oven to 190°C (375°F). Grease a muffin tin or line with muffin liners.
  5. Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full. Bake in the preheated oven for 15-20 minutes, or until the muffins are golden brown and a toothpick inserted into the center comes out clean. Remove from the oven and allow the muffins to cool slightly before serving. These oat bran and veggie muffins are sure to become a staple in your breakfast rotation.
