Overnight Chia Lime Pudding

This is such a light and refreshing recipe that’s very easy to whip up. With these 4 healthy ingredients you can create a sweet and dairy free dessert. Chia seeds is a known superfood reputable for its anti-oxidant properties and is a great source of vitamins, protein and fibre. Raw honey is also rich in anti-oxidants, vitamins and minerals and increases energy levels. Lemon juice is a natural detoxifer and helps in digestion. Coconut milk is a great substitute for dairy milk making this recipe dairy free. So not only is this a delicious snack, but it is also packed with goodness.

  • 1 Cup coconut milk
  • 2 Tablespoons chia seeds
  • 1 Tablespoon Fresh lime juice
  • 2 Tablespoons raw honey


  1. Gently melt the honey with lime juice in a microwave for no more than 10 seconds. Stir well. Be sure not to over heat honey, as it can produce toxic elements.

  2. In a small bowl, mix the chia seeds with the coconut milk. Add the honey and lime mix. Shake and place in fridge overnight. Serve with a slice of lime for garnish, if desired. Enjoy!
